What is a traditional French cassoulet?
Named for the earthenware cassole pot it's cooked in. This is a centuries-old, incredibly satisfying dish, painstakingly simmered for hours. It features tender white beans absorbing the concentrated flavors typically of preserved duck confit, premium pork, and French sausage, finished with a classic, crackling crust. A truly hearty taste of French country cuisine.
Our interpretation
We like to take a playful approach to classic recipes, focusing on dishes that can be sustainably executed in our tiny kitchen by our lead cook, Rene. This dish embraces the rich, indulgent flavor of one of our favorite proteins: pork. Inspired by the legendary Roy Choi, we use Spam as a savory punctuation mark, topping our playful spin on this French classic. We hope you enjoy our unique take!
